In the last episode, Dan made roast potato foil dinners on a campfire and a couple people asked for more recipes using this technique. In this episode, Dan demonstrates another recipe using a similar technique. First, he’ll bake the carrots in foil with fresh herbs and citrus. Baking the carrots in the foil steams them, infusing the flavors and making the carrots tender. Then, Dan opens the foil packet allowing the carrots to roast and caramelize. Dan wrote and recorded a simple finger-style acoustic song as part of a songwriting challenge called ‘February Album Writing Month’ entitled ‘The Carrot Shuffle’ to accompany the episode.
